Sizzling Southwestern Veggie Stir Fry Snack



Ingredients



- 1 medium bell pepper, diced
- 1 cup frozen corn, thawed
- 1 cup canned hominy, drained
- 1 roma tomato, diced
- 1 cup grape tomatoes, halved
- 1/2 red onion, thinly sliced
- 2 ripe avocados, diced
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- 1/2 cup black olives, sliced
- 1 cup canned black-eyed peas, drained and rinsed
- 1 cup canned black beans, drained and rinsed
- 1/4 cup Italian dressing
- 1/4 cup canned diced green chiles
- 1 teaspoon ground cumin
- Salt, to taste
- Pepper, to taste

Instructions



1. Preparation of Ingredients
Begin by preparing all the fresh ingredients. Dice the bell pepper, and roma tomato. Halve the grape tomatoes, and thinly slice the red onion. Dice the avocados and chop the cilantro. Set these aside for later use.

2. Preheat and Begin Stir Frying
Heat a large, non-stick skillet over medium-high heat. Add the Italian dressing to the pan as your stir-fry base.

3. Cook the Vegetables
Once the dressing is heated, add the diced bell pepper, slices of red onion, thawed corn, and canned hominy to the pan. Stir fry these ingredients for about 5 minutes, or until the bell pepper softens and the onion becomes slightly translucent. Stir constantly to prevent sticking.

4. Incorporate Tomatoes and Chiles
Add the roma tomatoes, grape tomatoes, and canned diced green chiles. Stir fry for an additional 3-4 minutes until the tomatoes begin to soften but retain some of their shape.

5. Mix in the Legumes
Reduce the heat to medium, then add the black-eyed peas and black beans to the mix. Stir for another 2-3 minutes until evenly combined and heated through.

6. Season the Stir Fry
Sprinkle the ground cumin, salt, and pepper over the stir fry. Stir well to ensure the spices are distributed evenly throughout the dish.

7. Add Fresh Elements
Remove the pan from the heat. Gently fold in the diced avocados and black olives. Drizzle the lime juice over the mixture for a burst of freshness and balance.

8. Garnish and Serve
Transfer the stir fry to a serving platter and top with chopped cilantro for a vibrant garnish. Serve warm as a satisfying, nutritious snack.
