Slow-Cooked Beef and Vegetable Stew Delight



Ingredients



- 2 pounds of beef chuck, cut into 1-inch cubes
- 1 large onion, diced
- 3 carrots, peeled and sliced
- 3 stalks of celery, sliced
- 4 medium potatoes, peeled and diced
- 2 tablespoons olive oil
- 4 cups beef broth
- 1 cup vegetable juice
- 2 tablespoons Worcestershire sauce
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 2 tablespoons cornstarch
- 2 tablespoons water
- 1 cup frozen peas

Instructions



1. Brown the Beef:
- Heat olive oil in a skillet over medium-high heat. Add beef cubes and brown them on all sides. Do this in batches to avoid overcrowding. Transfer the browned beef to the crock pot.

2. Prepare Vegetables:
- Add diced onion, sliced carrots, sliced celery, and diced potatoes to the crock pot with the beef.

3. Combine Liquids and Seasonings:
- In a mixing bowl, whisk together beef broth, vegetable juice, and Worcestershire sauce. Stir in rosemary, thyme, salt, black pepper, and garlic powder.

4. Cook in Crock Pot:
- Pour the liquid mixture over the beef and vegetables in the crock pot. Cover and cook on low for PT8H (8 hours) or on high for PT4H (4 hours).

5. Thicken the Stew:
- In a small bowl, mix cornstarch and water until smooth. About 30 minutes before serving, stir the cornstarch mixture into the stew to thicken.

6. Add Peas:
- During the last 30 minutes of cooking, add the peas to the crock pot. Stir well to combine.

7. Serve:
- Once the stew has thickened and the flavors have melded beautifully, serve hot and enjoy a comforting dinner with family and friends.
