Slow-Cooked Caramelized Onion Spread with Thyme
Ingredients
- 2 large yellow onions, thinly sliced
- 2 large red onions, thinly sliced
- 2 tablespoons kosher salt
- 2 tablespoons oil (vegetable or olive)
- 3 tablespoons unsalted butter, divided
- 3 sprigs fresh thyme
- 3 tablespoons balsamic vinegar
Instructions
1. Prepare the Onions
- Slice both the yellow and red onions into even, thin rings to ensure uniform cooking.
2. Set Up the Crock Pot
- In your Crock Pot, add 1 tablespoon of unsalted butter and the oil.
- Set the Crock Pot to low heat. This will allow the butter to melt gently, mixing with the oil to prevent burning.
3. Add Onions
- Add the sliced onions to the Crock Pot, mixing well to coat them evenly with the butter and oil mixture.
4. Season and Add Thyme
- Sprinkle 2 tablespoons of kosher salt over the onions.

8. Final Stir
- After the additional hour of cooking, give the onion mixture a final stir. The onions should be rich, golden-brown, and fragrant.
9. Serve
- Transfer the caramelized onion spread to a serving bowl. It can be served warm or at room temperature as a delicious snack on toasted bread or crackers.
