Slow-Cooked Chocolate Chili with a Spicy Twist
Ingredients
- 2 pounds ground beef
- 2 chili peppers, diced (adjust based on heat preference)
- 1 large onion, chopped
- 2 teaspoons ground cumin
- 2 teaspoons smoked paprika
- 1 teaspoon ground coriander
- 1 teaspoon dried oregano
- 1 tablespoon unsweetened cocoa powder
- 2 ounces dark chocolate, roughly chopped
- 2 cans (14.5 ounces each) tomatoes, crushed
- 2 cans (15 ounces each) kidney beans, drained and rinsed
- 4 cups beef stock
- 1 cup water
- Salt and pepper to taste
Instructions
1. Prepare Ingredients: In a large skillet over medium heat, brown the ground beef until fully cooked, breaking it apart with a spoon as it cooks. Drain excess fat and transfer to the crock pot.
2. Sauté Aromatics: In the same skillet, add diced chili peppers and chopped onions. Sauté until the onions are translucent, about 5 minutes. Add to the crock pot with the ground beef.
3. Blend Spices: In a small bowl, combine ground cumin, smoked paprika, ground coriander, dried oregano, and unsweetened cocoa powder. Sprinkle this spice mixture evenly over the beef and vegetables in the crock pot.
4. Chocolaty Depth: Sprinkle the roughly chopped dark chocolate over the top.
5. Tomatoes and Beans: Pour the crushed canned tomatoes and drained beans into the crock pot. Stir gently to integrate all ingredients.
6. Add Liquids: Pour in the beef stock and water. Stir to ensure everything is well combined. Season with salt and pepper as needed.
7. Cook Slowly: Cover the crock pot and set it to low heat. Cook for approximately 6 hours. If in a hurry, set to high heat and cook for about 3 hours.
8. Final Touches: Once cooking is complete, adjust seasoning if necessary. Serve hot with your choice of toppings like fresh cilantro, shredded cheese, or a dollop of sour cream.
