Slow-Cooked Citrus Pork with Fresh Cilantro



Ingredients


- 2 pounds boneless pork shoulder, trimmed of excess fat
- 1 cup freshly squeezed orange juice
- 1 lime, juiced
- 4 cloves garlic, minced
- 1 tablespoon ground cumin
- 1 tablespoon chili powder
- 1 teaspoon smoked paprika
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 medium onion, thinly sliced
- 1/2 cup fresh cilantro, chopped
- 1 tablespoon olive oil

Instructions


1. Prepare the Pork: Pat the pork shoulder dry with paper towels. Rub both sides with salt, black pepper, cumin, chili powder, and smoked paprika.

2. Sear the Pork: In a large skillet over medium-high heat, add olive oil. When the oil is hot, sear the pork shoulder until it's browned on all sides, about 3-4 minutes per side. Transfer the pork to the crock pot.

3. Aromatics: In the same skillet, add the sliced onion and garlic, sautéing for about 2-3 minutes until the onion becomes translucent. Add these aromatics to the crock pot.

4. Prepare the Citrus Marinade: In a bowl, mix the orange juice, lime juice, and any remaining spices from the pork rub.

5. Combine in the Crock Pot: Pour the citrus marinade over the pork and onions in the crock pot, ensuring the pork is evenly coated.

6. Slow Cook: Set the crock pot to low heat and let it cook for 6 to 8 hours. The slow cooking process will tenderize the meat and blend the flavors beautifully.

7. Garnish and Serve: Once the pork is tender and easily shreds with a fork, remove it from the crock pot and shred. Toss the shredded pork with chopped cilantro.

8. Finishing Touch: Serve pork over rice, in tacos, or alongside favorite sides, ensuring to drizzle some of the citrus broth from the pot over the top for extra flavor.
