Slow-Cooked Guinness Beef Stew



Ingredients



- 3 pounds beef chuck, cut into 2-inch cubes
- 1 tablespoon kosher salt
- 1 teaspoon freshly ground black pepper
- 2 tablespoons olive oil
- 1 large sweet onion, chopped
- 3 carrots, peeled and sliced into 1-inch pieces
- 3 celery stalks, sliced
- 4 cloves garlic, minced
- 1/4 cup all-purpose flour
- 2 tablespoons tomato paste
- 1 can (14.9 oz.) Guinness Draught beer
- 2 cups beef stock
- 2 tablespoons Worcestershire sauce
- 3 sprigs fresh thyme
- 2 bay leaves
- 1/4 cup fresh parsley leaves, chopped

Instructions



1. Prepare the Beef: Season the beef chuck cubes with kosher salt and black pepper.

2. Sear the Beef: In a large skillet, heat the olive oil over medium-high heat. Brown the beef cubes in batches, ensuring they are well-seared on all sides. Transfer them to the crock pot.

3. Prepare Vegetables: In the same skillet, add the chopped sweet onion, carrots, and celery. Cook for 5 minutes, stirring occasionally, until the vegetables begin to soften.

4. Add the Garlic: Stir in the minced garlic and cook for an additional minute until fragrant.

5. Create the Roux: Sprinkle the flour over the vegetables, stirring constantly for 2 minutes, ensuring there are no raw floury spots.

6. Mix in Liquid Ingredients: Add the tomato paste to the skillet, stirring for 1 minute. Gradually pour in the Guinness Draught beer, scraping up any brown bits from the bottom of the skillet. Let it simmer for 2 minutes.

7. Combine Components: Transfer the vegetable mixture to the crock pot, on top of the beef. Pour the beef stock and Worcestershire sauce over the ingredients.

8. Add Herbs: Nestle the fresh thyme sprigs and bay leaves in between the beef chunks.

9. Slow Cook: Cover the crock pot and set it to low. Cook for 8 hours, or until the beef is tender and flavorful.

10. Final Touch: Before serving, remove and discard the thyme sprigs and bay leaves. Stir in the freshly chopped parsley leaves for a burst of color and flavor.

11. Serve: Ladle the stew into bowls, ensuring an even distribution of beef and vegetables. Serve warm.
