Slow-Cooked Hearty Beef and Bean Chili



Ingredients



- 1 pound ground beef
- 1 large onion, diced
- 1 large bell pepper, diced
- 3 cloves garlic, minced
- 1 jalapeno, seeded and diced
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) pinto beans, drained and rinsed
- 1 can (15 oz) garbanzo beans, drained and rinsed
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (28 oz) diced tomatoes
- 1 can (15 oz) tomato sauce
- 1 cup beer
- 1 cup beef broth
- 2 tablespoons chili powder
- 1 tablespoon ground cumin
- 1 tablespoon smoked paprika
- 1 teaspoon cayenne pepper (adjust to taste)
- Salt and black pepper to taste

Instructions



1. Prepare the Meat and Vegetables
In a large skillet over medium heat, add the ground beef. Cook until browned, about 5 to 7 minutes, breaking it apart with a spatula. Drain excess fat and transfer the beef to the Crock-Pot.

2. Sauté Aromatics
Using the same skillet, add the diced onion, bell pepper, minced garlic, and jalapeno. Sauté until the vegetables are soft, about 5 minutes. Transfer the sautéed vegetables to the Crock-Pot.

3. Combine Ingredients
Into the Crock-Pot, add the kidney beans, black beans, pinto beans, garbanzo beans, white beans, diced tomatoes (with juice), and tomato sauce.

4. Flavor the Chili
Pour in the beer and beef broth. Stir in the chili powder, cumin, smoked paprika, cayenne pepper, salt, and black pepper. Mix everything thoroughly to combine.

5. Slow Cook
Set the Crock-Pot to low and cook the chili for 6 to 8 hours, or on high for 3 to 4 hours, until the flavors meld together and the chili is heated through.

6. Final Adjustments
Taste the chili and adjust seasoning with additional salt, pepper, or cayenne pepper if desired. Let the chili rest in the warm Crock-Pot for 15 minutes before serving to allow the flavors to settle.
