Slow-Cooked Pork and Potato Enchilada Stew
Ingredients
- 2 pounds pork shoulder, trimmed and cut into 1-inch cubes
- 1/4 cup all-purpose flour
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 2 tablespoons vegetable oil
- 4 cloves garlic, minced
- 1 large onion, diced
- 2 chiles, diced (remove seeds for less heat)
- 2 cups enchilada sauce
- 1 cup chicken or beef stock
- 2 teaspoons salt
- 4 medium potatoes, peeled and cubed
Instructions
1. Prepare the Pork:
- In a large bowl, combine the flour, black pepper, and garlic powder.
- Toss the pork cubes in the seasoned flour mixture until each piece is well coated.
2. Brown the Pork:
- In a large skillet, heat the vegetable oil over medium-high heat.
- Add the pork cubes and sear on all sides until golden brown, approximately 6-8 minutes.
- Once browned, transfer the pork to the crock pot.
3. Sauté Aromatics:
- In the same skillet, add the minced garlic, diced onion, and chiles.
- Sauté for 3-5 minutes, or until the onion becomes translucent and fragrant.
- Add the sautéed mixture to the crock pot with the pork.
4. Combine Ingredients:
- Pour the enchilada sauce and chicken or beef stock into the crock pot.
- Add the salt and stir to combine all the ingredients, ensuring the pork is submerged in the liquid.
5. Cook the Stew:
- Set the crock pot to low heat.
- Cover and cook for 6-8 hours, or until the pork is tender and the flavors have melded beautifully.
6. Add Potatoes:
- About 1.5 hours before serving, add the cubed potatoes to the crock pot.
- Stir gently to incorporate them into the stew.
- Continue cooking until the potatoes are fork-tender.
7. Serve and Enjoy:
- Once cooked, taste and adjust the seasoning if necessary.
- Serve the stew hot, garnished with fresh herbs or a dollop of sour cream if desired.
