Slow-Cooked Ranch Pepperoncini Beef Roast
Ingredients
- 4-pound beef roast
- 1 package dry ranch dressing mix (1 oz)
- 1 package au jus gravy mix (1 oz)
- 6 whole pepperoncini peppers
- 1/2 cup unsalted butter
Instructions
1. Prepare the Crock Pot: Place the Crock Pot liner inside the pot for easy cleanup, or lightly coat the inside with non-stick cooking spray to prevent sticking.
2. Season the Beef: Pat the beef roast dry with paper towels. Place it in the Crock Pot. Sprinkle the dry ranch dressing mix evenly over the roast, followed by the au jus gravy mix. Ensure the mixes cover the top completely for maximum flavor infusion.
3. Add the Peppers and Butter: Scatter the pepperoncini peppers around and on top of the roast. Cut the butter into smaller pieces and distribute them over the top of the beef and peppers. This will help create a rich, flavorful sauce as it melts.
4. Cook: Cover the Crock Pot with the lid. Set it to cook on "LOW" for approximately 8 hours or until the beef is tender and easily pulls apart with a fork. If time is limited, set it to "HIGH" and cook for 4-5 hours, though "LOW" is recommended for the best texture and taste.
5. Finish and Serve: Once cooked, carefully remove the roast from the Crock Pot and place it on a serving platter. Use forks to shred the beef, incorporating some of the cooking juices to enhance moisture and flavor. Serve with the pepperoncini and additional cooking liquid drizzled over the top.
