Slow-Cooked Savory Meat Medley
Ingredients
- 2 pounds chuck roast
- 2 pounds arm roast
- 1 pound beef shank
- 1.5 pounds pork shoulder
- 1.5 pounds pork butt
- 1.5 pounds pork picnic roast
- 2 large onions, sliced
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 cup red wine
- 3 tablespoons tomato paste
- 2 tablespoons Worcestershire sauce
- 1 tablespoon soy sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 2 bay leaves
- Salt and pepper to taste
Instructions
1. Prepare the Meat: Trim any excess fat from the chuck roast, arm roast, beef shank, pork shoulder, pork butt, and pork picnic roast. Season each piece generously with salt and pepper.
2. Layer Ingredients in Crock Pot: Place half of the sliced onions and minced garlic at the bottom of the crock pot. Arrange the beef and pork pieces on top. Add the remaining onions and garlic over the meat.
3. Mix the Sauce: In a bowl, whisk together the beef broth, red wine, tomato paste, Worcestershire sauce, soy sauce, dried thyme, dried rosemary, salt, and pepper. Pour this mixture over the meat and onions in the crock pot.
4. Add Bay Leaves: Tuck the bay leaves among the meat and vegetables for aroma and flavor enhancement.
5. Slow Cook: Cover the crock pot with its lid and cook on LOW for 8 hours or until the meat is fork-tender and flavorful.
6. Serve: Carefully remove the meat from the pot, discard the bay leaves, and spoon some of the cooking liquid over the meat before serving. Enjoy with a side of mashed potatoes, rice, or steamed vegetables.
