Smoky Chipotle Chicken & Bean Stew with Avocado & Lime
Ingredients
- 1 ½ lbs chicken breasts, skinless and boneless, cut into chunks
- 1 ½ cups canned beans, drained and rinsed (black or pinto recommended)
- 1 can (7 oz) chipotle peppers in adobo sauce
- 1 large onion, finely chopped
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 cup beer (lager or ale)
- ¼ cup masa harina
- 1 cup water
- 2 tablespoons lime juice
- 1 avocado, diced
- ¼ cup fresh cilantro, chopped
- ½ cup sour cream
- Salt and pepper to taste
Instructions
1. Prepare Ingredients: Begin by prepping your ingredients. Chop the onion, mince the garlic, and cut the chicken into 1-inch chunks.
2. Sear Chicken: In a large skillet over medium-high heat, add 1 tablespoon of olive oil. Add chicken chunks, season with salt and pepper, and sear until golden brown on all sides (about 5-7 minutes). Transfer seared chicken to your crock pot.
3. Saute Aromatics: In the same skillet, add the remaining olive oil. Add chopped onions and garlic, and sauté for about 3 minutes until the onion is translucent and the garlic is fragrant.
4. Combine Ingredients: Transfer the sautéed onions and garlic into the crock pot. Add chipotle peppers, beans, diced tomatoes, and beer. Stir to combine all ingredients.
5. Thicken Stew: In a small bowl, whisk together the masa harina and water until smooth. Pour the mixture into the crock pot, stirring well to incorporate.
6. Cook: Secure the lid on your crock pot and cook on low heat for PT6H30M (6 hours and 30 minutes) or on high heat for PT3H30M (3 hours and 30 minutes), until the chicken is tender and the flavors are well integrated.
7. Add Lime Juice: Once cooked, stir in lime juice and adjust seasoning with additional salt and pepper if necessary.
8. Serve: Serve the stew hot, garnished with fresh diced avocado, chopped cilantro, and a dollop of sour cream on top. For an extra zing, you can add more lime juice on individual servings.
