- 8 ounces ditalini pasta
- 3 large hard-boiled eggs, peeled and chopped
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon white vinegar
- 1 tablespoon sugar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/4 teaspoon smoked paprika
- 2 green onions, finely chopped
- 1/4 cup red onion, finely diced
Instructions
1. Cook the Pasta
- Bring a large pot of salted water to a boil over medium-high heat.
- Add the ditalini pasta and cook until al dente, according to package instructions (approximately 8-10 minutes).
- Drain the pasta and rinse under cold water until completely cooled. Set aside to fully drain.
2. Prepare the Dressing
- In a large mixing bowl, whisk together the mayonnaise, Dijon mustard, white vinegar, sugar, salt, black pepper, garlic powder, and smoked paprika until smooth and well combined.
3. Combine Ingredients
- Gently fold the chopped hard-boiled eggs into the dressing until coated.
- Add the cooled ditalini pasta, green onions, and red onion. Toss together until all ingredients are evenly distributed and coated with the dressing.
4. Chill the Salad
- Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld together.
5. Serve
- Once chilled, give the pasta salad a gentle toss and adjust the seasoning if necessary.
- Serve cold as a refreshing lunch option or as a side dish for a larger meal.
