Smoky Grilled Vegetable and Herb-Infused Potato Packets
Ingredients
- 4 large potatoes, sliced thin
- 1 large onion, sliced
- 4 tablespoons butter, melted
- 4 cloves garlic, minced
- 2 teaspoons fresh rosemary, chopped
- 2 tablespoons olive oil
- 1/2 cup Parmesan cheese, grated
- 1/2 cup bacon bits
- 3 green onions, chopped
- 1 tablespoon fresh dill, chopped
- 2 tablespoons fresh chives, chopped
- 1 tablespoon fresh cilantro, chopped
- Salt and pepper to taste
- 2 large carrots, sliced thin
- 1 cup mushrooms, sliced
- 1 red bell pepper, sliced
- 1/2 small cabbage, shredded
- 1/2 cup sour cream
- 1 tablespoon fresh parsley, chopped
- Aluminum foil for wrapping
Instructions
1. Prepare the Grill:
- Preheat your charcoal grill to medium-high heat, around 400°F.
2. Prepare Ingredients:
- In a large mixing bowl, combine sliced potatoes, onions, carrots, mushrooms, bell peppers, and shredded cabbage.
- Add melted butter, minced garlic, olive oil, rosemary, and season with salt and pepper. Toss until all vegetables are well coated.
3. Assemble Foil Packets:
- Tear off 4 large sheets of aluminum foil, about 18 inches each.
- Divide the vegetable mixture evenly among the foil sheets, placing them in the center of each sheet.
- Sprinkle Parmesan cheese and bacon bits over each portion.
- Fold the sides of the foil over the vegetables, then fold the ends to seal each packet tightly.
4. Grill the Packets:
- Place the foil packets on the preheated charcoal grill.
- Cover the grill and cook for 25 minutes, flipping the packets halfway through.
5. Finish with Herbs:
- Remove packets from the grill using tongs. Carefully open each packet to release steam.
- Top with green onions, dill, chives, cilantro, and parsley.
6. Serve with Sour Cream:
- Serve the vegetable and herb-infused potato packets immediately, accompanied by a dollop of sour cream on each.
