Sour Cherry Vanilla Tart Delight
Ingredients
- 2 ½ cups all-purpose flour
- 1 cup unsalted butter, cold and cubed
- ¾ cup granulated sugar
- ½ teaspoon salt
- ½ teaspoon vanilla extract
- 5 cups sour cherries, pitted
- ½ cup lemon juice
- 1 cup sugar (for cherry filling)
- 2 tablespoons cornstarch
Instructions
1. Prepare the tart crust:
a. In a large mixing bowl, combine 2 ½ cups of all-purpose flour, ¾ cup of granulated sugar, and ½ teaspoon of salt.
b. Add in 1 cup of cold, cubed unsalted butter. Use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
c. Stir in ½ teaspoon of vanilla extract until combined.
d. Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 1 hour (PT1H).
2. Prepare the cherry filling:
a. In a medium saucepan over medium heat, combine 5 cups of pitted sour cherries, 1 cup of sugar, and ½ cup of lemon juice.
b. Stir occasionally until the sugar is dissolved and the cherries release their juices, about 5 minutes (PT5M).
c. Dissolve 2 tablespoons of cornstarch in a small amount of water and add it to the cherry mixture. Stir until thickened, approximately 3 minutes (PT3M). Set aside to cool.
3. Assemble the tart:
a. Preheat the oven to 375°F (190°C).
b. On a lightly floured surface, roll out the chilled dough to fit your tart pan (approximately 9 inches in diameter).
c. Gently press the dough into the tart pan, trimming any excess from the edges.
d. Pour the cooled cherry filling evenly into the crust.
4. Bake the tart:
a. Place the tart in the preheated oven and bake until the crust is golden brown and the filling is bubbling, about 30 minutes (PT30M).
b. Remove from the oven and allow to cool before serving.
