Southwestern Chicken and Bean Skillet
Ingredients
- 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 1 cup chicken broth
- 1 cup corn kernels (fresh, canned, or frozen)
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (14.5 ounces) diced tomatoes, drained
Instructions
1. Preheat and Season:
Heat the olive oil in a large skillet over medium-high heat. Season the chicken cubes with garlic powder, cumin, salt, black pepper, and cayenne pepper, ensuring each piece is well-coated.
2. Cook the Chicken:
Add the seasoned chicken to the skillet. Cook for about 6-8 minutes, stirring occasionally, until the chicken is browned and cooked through.
3. Simmer the Ingredients:
Lower the heat to medium and pour in the chicken broth. Stir in the corn, black beans, and diced tomatoes.
4. Combine and Cook:
Mix thoroughly to combine all ingredients. Cover and let simmer for an additional 10-12 minutes, allowing the flavors to meld together. Stir occasionally.
5. Final Touches:
Taste and adjust seasoning if necessary. Remove from heat and let it sit for a couple of minutes before serving.
