Spiced Beef and Rice Skillet Fiesta



Ingredients



- 1 pound ground beef
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1 cup uncooked rice
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (10 ounces) tomatoes with diced green chiles
- 1 cup corn kernels (fresh, canned, or frozen)
- 2 cups beef broth
- 1 cup Colby Jack cheese, shredded
- 1 fresh tomato, diced
- 1 ripe avocado, diced
- 1/2 cup sour cream
- 1 jalapeño, sliced (optional for garnish)

Instructions



1. Prepare Ingredients: Begin by prepping all your ingredients. Chop the onion and dice the fresh tomato and avocado. Rinse and drain the black beans.

2. Cook the Beef: In a large skillet, heat olive oil over medium heat. Add the ground beef and chopped onion, cooking until the beef is browned and the onion is soft, about PT10M (10 minutes).

3. Flavor the Beef: Stir in the garlic powder, onion powder, smoked paprika, chili powder, cumin, coriander, oregano, and salt. Cook for an additional PT1M (1 minute) to release the spices' aroma.

4. Add the Grains and Veggies: Stir in the uncooked rice, black beans, tomatoes with diced green chiles (do not drain), corn, and beef broth. Bring the mixture to a boil.

5. Simmer the Dish: Reduce the heat to low, cover the skillet, and let it simmer for PT20M (20 minutes) until the rice is tender and the liquid is absorbed. Stir occasionally to prevent sticking.

6. Finish with Cheese: Turn off the heat and sprinkle the shredded Colby Jack cheese over the top. Cover again, allowing the residual heat to melt the cheese for about PT5M (5 minutes).

7. Garnish and Serve: Serve the dish hot, topped with diced fresh tomato, avocado, a dollop of sour cream, and sliced jalapeño for those who enjoy some heat.
