Spiced Chicken Breasts with Elote-Inspired Corn Sauté



Ingredients



Main Components:
- 4 medium chicken breasts
- 4 ears of corn, kernels removed
- 3 tablespoons extra virgin olive oil
- 2 tablespoons salted butter
- 2 tablespoons Mexican crema
- 1/2 cup crumbled Cotija cheese

Seasonings & Spices:
- 1 tablespoon chili powder
- 1 teaspoon smoked paprika
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 tablespoon flour
- 1 teaspoon garlic powder

Aromatics:
- 1/2 large onion, finely chopped
- 2 cloves of garlic, minced

Garnishes:
- 1 tablespoon lime juice
- 1/4 cup chopped cilantro
- 1/4 cup sliced green onions

Instructions



1. Prepare Chicken:
- In a small bowl, combine 1 tablespoon of flour, 1 teaspoon of chili powder, 1 teaspoon of kosher salt, 1/2 teaspoon of black pepper, and 1 teaspoon of smoked paprika.
- Pat the chicken breasts dry with paper towels. Season both sides with the spice mixture.

2. Pan Fry Chicken:
- Heat 2 tablespoons of extra virgin olive oil in a large skillet over medium-high heat.
- Once hot, add the chicken breasts and pan-fry for about 6-7 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F / 74°C).
- Remove the chicken from the skillet and set aside, covering lightly with aluminum foil to keep warm.

3. Prepare the Corn Sauté:
- In the same skillet, add 1 tablespoon of butter and allow it to melt. Add the chopped onion and minced garlic. Sauté for 2-3 minutes until the onion becomes translucent.
- Stir in the remaining chili powder and garlic powder. Add the corn kernels, stirring frequently for about 5 minutes, until the corn starts to char slightly and becomes tender.
- Mix in 2 tablespoons of Mexican crema and 1 tablespoon of lime juice. Stir well.
- Remove from heat and fold in the crumbled Cotija cheese, chopped cilantro, and sliced green onions.

4. Serve:
- Slice the chicken breasts and arrange them on a serving platter.
- Top with the elote-inspired corn sauté. Garnish with extra cilantro and lime wedges, if desired.
