Spiced Chicken Curry with Creamy Tomato Yogurt Sauce



Ingredients



- 1 ½ lbs chicken, cut into bite-sized pieces
- 1 tsp salt
- 1 tsp ground cumin
- 1 tsp ground coriander
- ½ tsp turmeric
- ½ tsp black pepper
- ¼ tsp cayenne pepper
- 4 cloves garlic, minced
- 1 inch piece fresh ginger, grated
- 1 large onion, finely chopped
- 1 cup water
- 3 tbsp vegetable oil
- 2 tbsp ghee
- 2 tbsp tomato paste
- ½ cup plain yogurt
- 1 tsp garam masala
- ½ cup heavy cream
- ½ cup cilantro leaves, chopped, for garnish

Instructions



1. Marinate the Chicken:
In a large bowl, combine chicken pieces with salt, cumin, coriander, turmeric, black pepper, and cayenne pepper. Let it sit for 20 minutes while you prepare other ingredients.

2. Sauté Aromatics:
In a large skillet, heat vegetable oil over medium heat. Add the onions and sauté for 5-7 minutes until golden brown. Add garlic and ginger, cooking for another 2 minutes while stirring continuously.

3. Cook the Chicken:
Increase the heat to medium-high and add the marinated chicken pieces to the skillet. Cook until the chicken is browned on all sides, approximately 10 minutes.

4. Create the Base Sauce:
Reduce the heat to medium and add the ghee and tomato paste to the skillet. Stir until the paste is well incorporated. Pour in the yogurt, stirring to blend smoothly.

5. Simmer with Spices:
Add the water to the mixture, stirring to combine. Sprinkle in the garam masala, then cover and let simmer for 15 minutes on low heat, allowing the flavors to meld.

6. Finish with Cream:
Uncover the skillet and stir in the heavy cream. Let it cook for an additional 5 minutes, stirring occasionally until the sauce is rich and creamy.

7. Garnish and Serve:
Remove from heat. Garnish with chopped cilantro leaves. Serve hot with rice or naan.
