Spiced Chickpea Masala with Fresh Cilantro and Lemon



Ingredients



- 2 cups canned chickpeas, drained and rinsed
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1-inch ginger, grated
- 3 medium tomatoes, finely chopped
- 1 bunch fresh cilantro, chopped (reserve some for garnish)
- 1 green chili, chopped
- 1 lemon, juiced
- 1 tablespoon cumin seeds
- 1 tablespoon ground coriander
- 1 teaspoon ground turmeric
- 1 tablespoon ground cumin
- 1 teaspoon red chili powder
- 1 tablespoon garam masala
- 3 tablespoons oil
- Salt, to taste

Instructions



1. Heat the Oil: In a large skillet, heat 3 tablespoons of oil over medium heat until shimmering.

2. Sauté Aromatics: Add 1 tablespoon of cumin seeds and let them sizzle for about 30 seconds. Add the chopped onion and sauté until translucent, about 5 minutes.

3. Add Garlic and Ginger: Stir in the minced garlic and grated ginger, cooking until fragrant, approximately 1 minute.

4. Tomato Time: Add the chopped tomatoes to the skillet. Cook until they break down and form a thick sauce, about 10 minutes.

5. Spice It Up: Mix in 1 tablespoon ground coriander, 1 teaspoon ground turmeric, 1 tablespoon ground cumin, 1 teaspoon red chili powder, and 1 tablespoon garam masala. Stir well to combine.

6. Incorporate Chickpeas: Add the drained and rinsed chickpeas into the pan. Stir to coat the chickpeas with the spice mixture.

7. Simmer: Pour in 1 cup of water and bring the mixture to a simmer. Cook for 15 minutes, stirring occasionally, until the chickpeas are fully heated through and the sauce thickens.

8. Final Touches: Stir in the chopped green chili and most of the cilantro. Season with salt to taste, and squeeze the juice of 1 lemon over the top.

9. Garnish and Serve: Remove from heat, garnish with reserved cilantro, and serve hot with rice or bread.
