Spiced Coconut Chicken with Chickpeas and Garlic Naan
Ingredients
- 2 pounds boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
- 1 ½ cups coconut milk
- 1 can (15 ounces) chickpeas, drained and rinsed
- 2 tablespoons garam masala
- 1 teaspoon crushed red pepper flakes
- 2 cups uncooked rice
- 4 large garlic naan breads
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional: fresh cilantro for garnish
Instructions
1. Prepare the Rice
- Rinse the rice under cold water until the water runs clear.
- In a pot on the stove, bring 4 cups of water to a boil.
- Add the rice, cover, and reduce heat to low. Allow it to simmer for around 18-20 minutes, or until the rice is tender and water is absorbed.
2. Cook the Chicken
- In a large pan, heat 1 tablespoon of olive oil over medium-high heat.
- Add the chicken pieces and season with salt and pepper. Cook, stirring occasionally, until lightly browned and cooked through, about 8-10 minutes.
3. Add Spices and Coconut Milk
- Reduce the heat to medium and add the garam masala and crushed red pepper flakes to the pan with the chicken. Stir to coat the chicken in the spices.
- Pour in the coconut milk, stirring well, and bring the mixture to a gentle simmer.
4. Incorporate Chickpeas
- Add the drained chickpeas to the pan, ensuring they are coated with the sauce.
- Let everything simmer together for about 5 minutes, allowing all flavors to meld.
5. Warm the Garlic Naan
- While the chicken mixture simmers, warm the garlic naan breads. You can do this by placing them in a preheated oven at 350°F for about 5 minutes, or by grilling on a stovetop grill pan for a few minutes on each side until warmed through.
6. Serve
- To serve, place a portion of rice on each plate, spoon the spiced coconut chicken and chickpeas over the rice, and garnish with fresh cilantro if desired.
- Serve with warm garlic naan on the side.
