Spiced Pumpkin Breakfast Muffins with Cinnamon Sugar Topping



Ingredients



Dry Ingredients:
- 2 1/4 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground allspice

Wet Ingredients:
- 1/2 cup unsalted butter, softened
- 1 1/4 cups brown sugar
- 2 large eggs
- 1 cup pumpkin puree
- 1 cup buttermilk
- 1 teaspoon vanilla extract

Topping:
- 2 tablespoons unsalted butter, melted
- 1/4 cup granulated sugar
- 1 teaspoon ground cinnamon

Instructions



1. Preheat and Prepare:
Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or generously grease each cup.

2. Mix Dry Ingredients:
In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, ground ginger, ground cinnamon, ground nutmeg, and ground allspice until well combined. Set aside.

3. Cream Butter and Sugar:
In another large bowl, cream the softened butter and brown sugar together using an electric mixer on medium speed until light and fluffy, about 3 to 4 minutes.

4. Add Eggs and Pumpkin:
Add the eggs one at a time, beating well after each addition. Mix in the pumpkin puree and vanilla extract until the mixture is smooth.

5. Combine Wet and Dry Ingredients:
Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Begin and end with the dry ingredients, mixing just until combined after each addition. Do not overmix.

6. Fill Muffin Cups:
Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.

7. Bake:
Place the muffin tin on the center rack of the preheated oven and bake for 18-22 minutes or until a toothpick inserted into the center of a muffin comes out clean.

8. Prepare the Topping:
While the muffins are baking, prepare the cinnamon sugar topping by mixing the granulated sugar and ground cinnamon in a small bowl.

9. Finish and Serve:
Once the muffins are done baking, remove them from the oven and let them cool in the pan for 5 minutes. Brush the tops of the warm muffins with melted butter, then sprinkle generously with the cinnamon sugar mixture. Allow to cool on a wire rack before serving.
