Spiced Pumpkin Oat Breakfast Muffins



Ingredients



- 1 cup all-purpose flour
- 1 cup oat flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 1/2 teaspoon salt
- 2 large eggs
- 1/2 cup honey or maple syrup
- 1/2 cup unsalted butter, melted
- 1/4 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- 1 cup pumpkin puree
- 1/2 cup chopped walnuts or almond slices

Instructions



1. Preheat the Oven:
Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease each cup to prevent sticking.

2. Mix the Dry Ingredients:
In a large bowl, combine the all-purpose flour, oat flour, baking powder, baking soda, ground cinnamon, nutmeg, ginger, and salt. Whisk everything together until well combined.

3. Prepare the Wet Ingredients:
In a separate medium bowl, beat the eggs gently. Add the honey or maple syrup, melted butter, vegetable oil, and vanilla extract. Mix thoroughly.

4. Combine Buttermilk and Pumpkin:
Stir the buttermilk and pumpkin puree into the wet mixture until fully integrated and smooth.

5. Incorporate the Dry and Wet Mixtures:
Gradually add the dry flour mixture to the wet ingredients. Stir gently until just combined. Be careful not to overmix, as this can make the muffins dense.

6. Fold in the Nuts:
Gently fold in the chopped walnuts or almond slices to the batter.

7. Fill the Muffin Tins:
Evenly distribute the batter into the prepared muffin tin, filling each cup about 3/4 full.

8. Bake the Muffins:
Place the muffin tin in the preheated oven. Bake for approximately 20–25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

9. Cool and Serve:
Allow the muffins to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely. Serve warm or at room temperature.
