Spiced Pumpkin Swirl Bread with Cream Cheese Filling



Ingredients



For the Bread:
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons ground cinnamon
- 1 teaspoon ground ginger
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground allspice
- 1 1/2 cups pumpkin puree
- 1/2 cup dark brown sugar, packed
- 1/2 cup light brown sugar, packed
- 1/2 cup vegetable oil
- 1/4 cup white granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup chopped nuts (optional)

For the Cream Cheese Filling:
- 8 oz cream cheese, softened
- 1/3 cup powdered sugar
- 1 tablespoon milk
- 1 teaspoon vanilla extract

Instructions



1. Preheat the Oven:
- Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line with parchment paper, allowing some overhang for easy removal.

2. Prepare the Dry Ingredients:
- In a medium bowl, whisk together the all-purpose flour, baking soda, salt, ground cinnamon, ground ginger, ground cloves, ground nutmeg, and ground allspice. Set aside.

3. Mix the Wet Ingredients:
- In a large bowl, combine the pumpkin puree, dark brown sugar, light brown sugar, vegetable oil, white granulated sugar, eggs, and vanilla extract. Whisk until smooth and well combined.

4. Combine Wet and Dry Ingredients:
- Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Be careful not to overmix. Fold in the chopped nuts if using.

5. Prepare the Cream Cheese Filling:
- In another bowl, beat the softened cream cheese with the powdered sugar, milk, and vanilla extract until smooth and creamy.

6. Layer the Bread Batter and Cream Cheese Filling:
- Pour half of the pumpkin bread batter into the prepared loaf pan. Spoon the cream cheese filling on top and spread it evenly. Cover with the remaining pumpkin batter.

7. Bake the Bread:
- Bake in the preheated oven for 60 minutes or until a toothpick inserted into the center comes out clean. If the top is browning too quickly, tent with aluminum foil.

8. Cool and Serve:
- Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Slice and enjoy!
