Spiced Spinach & Herb Omelette with Basmati Rice
Ingredients
- 2 tablespoons olive oil
- 1 yellow onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground turmeric
- 2 cups fresh spinach, roughly chopped
- 1/4 cup fresh parsley leaves, chopped
- 1/4 cup fresh mint leaves, chopped
- Salt, to taste
- Freshly ground black pepper, to taste
- 4 large eggs
- 2 cups steamed basmati rice
- Crusty sourdough bread, to serve
Instructions
1. Prepare Ingredients: Ensure all your ingredients are prepped and organized for easy access while cooking.
2. Sauté the Aromatics: Heat the olive oil in a non-stick skillet over medium heat. Add the chopped yellow onion and garlic, sautéing for about 5-7 minutes, until the onions are soft and translucent.
3. Add the Turmeric & Greens: Sprinkle the turmeric over the sautéed onions and garlic, stirring well to combine. Immediately add the chopped spinach, parsley, and mint. Cook for about 2-3 minutes, until the spinach is wilted. Season with salt and freshly ground black pepper to taste.
4. Prepare the Omelette Mixture: In a separate bowl, crack the eggs and beat them until well blended. Pour the cooked spinach and herb mixture into the eggs, stirring until combined.
5. Cook the Omelette: Wipe the skillet clean and add a touch more olive oil. Pour the egg mixture back into the skillet, spreading evenly. Cook on low heat until the eggs are mostly set, around 5-7 minutes. Carefully fold the omelette in half and continue cooking until fully set, about 2-3 more minutes.
6. Serve: Plate portions of steamed basmati rice and serve with slices of the omelette. Add crusty sourdough bread on the side for a complete, satisfying breakfast.
