Ingredients
- 2 large chicken breasts
- 1 tsp baking soda
- 1 tbsp kosher salt
- 1 tbsp paprika
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp chili powder
- 1 tbsp brown sugar
- 1/4 tsp cayenne pepper (adjust for desired heat)
- 1 tsp Italian seasoning
- 1/2 tsp ground fennel
Instructions
1. Prepare Chicken:
- Rinse and pat dry the chicken breasts with paper towels.
- Use a sharp knife to score the chicken breasts on both sides lightly. This helps the marinade penetrate the chicken.
2. Tenderize Chicken:
- In a small bowl, combine the baking soda and kosher salt. Rub the mixture evenly over the chicken breasts. Allow it to sit at room temperature for 15 minutes to tenderize.
3. Prepare Spice Rub:
- In another bowl, mix together the paprika, onion powder, garlic powder, chili powder, brown sugar, cayenne pepper, Italian seasoning, and ground fennel.
4. Season Chicken:
- After the chicken has rested, rinse off the baking soda and salt mixture thoroughly and pat the breasts dry.
- Rub the spice mixture evenly over both sides of each chicken breast, ensuring full coverage.
5. Preheat Air Fryer:
- Preheat the air fryer to 380°F (193°C) for 5 minutes.
6. Cook Chicken:
- Place the seasoned chicken breasts in the air fryer basket in a single layer.
- Air fry at 380°F (193°C) for 18–22 minutes, turning halfway through, until the internal temperature reaches 165°F (74°C).
7. Rest and Serve:
- Remove the chicken breasts from the air fryer and let them rest for 5 minutes before slicing to retain their juices. Serve with a side of vegetables or your choice of side dish.
