Spicy Baked Bean Casserole with Pickled Jalapeños
Ingredients
- 2 (15 oz) cans baked beans
- 1 cup jarred pickled jalapeños, drained and sliced
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded cheddar cheese
- 1/4 cup chopped fresh cilantro (optional, for garnish)
Instructions
1. Preheat the Oven: Preheat your oven to 375°F (190°C).
2. Prepare the Flavor Base: In a medium-sized skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional 2 minutes, stirring frequently to prevent burning.
3. Mix the Spices: Stir in the smoked paprika, ground cumin, salt, and black pepper. Cook for another 1-2 minutes until the spices are fragrant.
4. Combine Ingredients: In a large mixing bowl, combine the baked beans, sautéed onion mixture, and half the jarred pickled jalapeños. Stir well to ensure everything is evenly mixed.
5. Assemble the Casserole: Transfer the bean mixture into a 9x13-inch baking dish, spreading it evenly. Top with the remaining jalapeño slices.
6. Bake: Place the dish in the preheated oven and bake for 20 minutes.
7. Add Cheese: Remove the casserole from the oven, sprinkle the shredded cheddar cheese evenly over the top, and return it to the oven. Bake for an additional 10 minutes, or until the cheese is melted and bubbly.
8. Garnish and Serve: Allow the casserole to cool slightly, about 5 minutes. Garnish with chopped fresh cilantro if desired before serving.
