Spicy Baked Macaroni and Cheese with Green Chiles
Ingredients
- 8 oz Macaroni
- 2 tbsp Butter
- 2 tbsp All-purpose flour
- 2 cups Milk
- 1/2 tsp Cumin
- 1/2 tsp Chili powder
- 1/2 tsp Salt
- 1/4 tsp Black pepper
- 2 Green chiles, chopped
- 2 cups Monterey cheese, shredded
- 2 cups Sharp cheddar, shredded
- 1/2 cup Greek yogurt
Instructions
1. Preheat the Oven
Preheat your oven to 375°F (190°C).
2. Cook the Macaroni
Boil the macaroni in a large pot of salted water until just al dente, about 7 minutes. Drain, rinse under cold water, and set aside.
3. Prepare the Cheese Sauce
In a medium saucepan over medium heat, melt the butter. Stir in the flour to form a roux, cooking for about 1 minute while continuously stirring. Gradually whisk in the milk, ensuring there are no lumps.
4. Add Spices
Once the milk mixture is smooth and thickened, stir in cumin, chili powder, salt, and black pepper.
5. Incorporate Cheeses and Chiles
Lower the heat and add the Monterey cheese and sharp cheddar, stirring until melted and smooth. Add the chopped green chiles and Greek yogurt, and mix well.

Transfer the mixture to a greased baking dish. Top with additional cheese if desired. Bake in the preheated oven for 20 minutes, or until the top is golden and bubbly.
