Spicy Basil Stir-Fried Rice Noodles



Ingredients

- 8 oz rice noodles
- 2 cups mixed vegetables (such as bell peppers, broccoli, and carrots)
- 2 medium tomatoes, chopped
- 1/2 cup fresh basil leaves

Sauces and Seasonings:
- 2 tablespoons oyster sauce
- 1 tablespoon soy sauce
- 1 tablespoon fish sauce
- 2 tablespoons bottled barbecue sauce
- 1 tablespoon teriyaki sauce
- 1 tablespoon honey
- 1 teaspoon sugar
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 2 tablespoons oil (vegetable or canola)

Aromatics:
- 2 shallots, thinly sliced
- 3 cloves garlic, minced
- 2-3 chilies, sliced (adjust based on heat preference)

Instructions



1. Prepare Rice Noodles:
- Soak 8 oz of rice noodles in lukewarm water for about 10 minutes until they soften. Drain and set aside.

2. Mix Sauce:
- In a bowl, combine 2 tablespoons oyster sauce, 1 tablespoon soy sauce, 1 tablespoon fish sauce, 2 tablespoons bottled barbecue sauce, 1 tablespoon teriyaki sauce, 1 tablespoon honey, 1 teaspoon sugar, 1/2 teaspoon black pepper, and 1/2 teaspoon salt. Stir until well mixed and set aside.

3. Sauté Aromatics:
- Heat 2 tablespoons of oil in a large wok or skillet over medium-high heat. Add 2 sliced shallots, 3 minced garlic cloves, and 2-3 sliced chilies. Stir-fry for about 2-3 minutes until the shallots turn translucent and aromatic.

4. Cook Vegetables:
- Increase the heat to high and add 2 cups of mixed vegetables. Stir-fry for about 3-4 minutes, ensuring the vegetables are tender-crisp.

5. Stir-Fry Noodles:
- Add the softened rice noodles to the skillet, followed by the sauce mix. Stir-fry for another 2-3 minutes, ensuring the noodles and vegetables are well coated.

6. Add Tomatoes and Basil:
- Add 2 chopped tomatoes and 1/2 cup of fresh basil leaves. Stir-fry for an additional 2 minutes until the basil is wilted and the tomatoes are slightly softened.

7. Serve:
- Turn off the heat and transfer the noodles to a serving platter. Garnish with additional basil leaves if desired. Serve hot.
