Spicy Beef and Veggie Wonton Cups



Ingredients



Main Components
- 1 lb ground beef
- 12 wonton wrappers
- 2 red bell peppers, diced
- 1 cup canned chickpeas, drained and rinsed
- 1 serrano pepper, finely chopped
- 4 oz cheddar cheese, shredded
- 4 oz parmesan cheese, grated

Seasonings and Sauces
- 1 tbsp cumin
- 1 tbsp coriander
- 1 tsp cayenne pepper
- 1 tbsp sriracha
- 2 tbsp buffalo wing sauce

Optional Garnishes
- 1/2 cup sour cream
- 1/4 cup cilantro, chopped
- 1/2 cup diced tomatoes
- 1/4 cup feta cheese, crumbled

Instructions



1. Preheat the Oven:
Preheat your oven to 375°F (190°C).

2. Prepare the Ground Beef Mixture:
In a large pan over medium heat, cook the ground beef until browned, approximately PT10M (10 minutes).
Drain any excess fat. Add the cumin, coriander, and cayenne pepper. Stir thoroughly to combine the spices.

3. Add the Vegetables and Cheese:
Add the diced red bell peppers, serrano pepper, and canned chickpeas to the beef mixture. Cook for another PT5M (5 minutes), stirring occasionally.
Stir in half of both the cheddar and parmesan cheeses, and mix until the cheese has melted into the mixture.

4. Prepare the Wonton Cups:
Lightly grease a muffin tin with non-stick spray. Place one wonton wrapper into each cup, pressing it down to create a cup shape.

5. Assemble the Wonton Cups:
Fill each wonton cup with the beef and veggie mixture, ensuring each cup is evenly filled. Top with the remaining cheddar and parmesan cheeses.

6. Bake:
Place the muffin tin in the preheated oven and bake for PT10M (10 minutes), or until the wonton edges are golden and the cheese has melted.

7. Serve and Garnish:
Allow to cool slightly before removing from the tin. Optionally, garnish with a dollop of sour cream, diced tomatoes, crumbled feta cheese, and chopped cilantro.
