Spicy Black Bean and Fire-Roasted Tomato Soup with Tortilla Strips

Ingredients

- 2 tablespoons olive oil
- 4 garlic cloves, minced
- 1 medium yellow onion, finely chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon chili powder
- 2 (15 oz) cans black beans, drained and rinsed
- 1 (14.5 oz) can fire-roasted diced tomatoes
- 2 cups vegetable broth
- 1 cup chicken broth
- 1 teaspoon kosher salt, or to taste
- 1/2 cup sour cream
- 1/2 cup yogurt
- 1/4 cup chopped cilantro
- Sliced jalapeños, for garnish
- Pickled red onions, for garnish
- Lime wedges, for serving
- Tortilla chips, for serving
- 1 cup tortilla strips, for topping

Instructions

1. Heat the Oil: In a large pot, heat the olive oil over medium heat.

2. Sauté the Aromatics: Add the minced garlic and chopped onion to the pot. Sauté for about 5 minutes, until the onion becomes translucent and fragrant.

3. Spice It Up: Stir in the ground cumin, ground coriander, and chili powder. Cook for an additional 1 minute to toast the spices, enhancing their flavors.

4. Add the Main Components: Add the black beans and fire-roasted diced tomatoes to the pot. Stir to combine.

5. Pour in the Broth: Pour in the vegetable broth and chicken broth. Stir well to ensure all ingredients are evenly distributed.

6. Simmer the Soup: Bring the mixture to a gentle simmer. Cover the pot and let it cook for approximately 20 minutes, allowing the flavors to meld together nicely.

7. Blend (Optional): For a smoother texture, use an immersion blender to partially blend the soup. Be sure to leave some chunks for texture, if desired.

8. Season to Taste: Add the kosher salt and adjust according to your taste preference.

9. Prepare the Creamy Garnish: In a small bowl, mix together the sour cream and yogurt.

10. Serve: Ladle the soup into bowls. Top with a dollop of the sour cream and yogurt mixture. Garnish with cilantro, sliced jalapeños, pickled red onions, and a handful of tortilla strips. Serve with lime wedges and tortilla chips on the side.
