Spicy Breakfast Potato Hash with Sauteed Peppers and Onions



Ingredients



- 2 medium Russet potatoes, diced
- 2 medium Yukon Gold potatoes, diced
- 1 teaspoon turmeric
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons canola oil
- 2 tablespoons avocado oil
- 1 large onion, finely sliced
- 2 bell peppers (any color), sliced
- 1 cup shredded cheese (cheddar or your choice)
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon red chili flakes
- 1 tablespoon fresh thyme leaves
- 2 tablespoons hot sauce
- 2 teaspoons Cuban Style Seasoning Blend

Instructions



1. Prep the Ingredients:
Peel and dice the Russet and Yukon Gold potatoes into small, even cubes. Slice the onion and bell peppers into thin strips.

2. Season the Potatoes:
In a large bowl, combine diced potatoes, turmeric, ground cumin, salt, and black pepper. Toss well to evenly coat the potatoes with the spices.

3. Heat the Oils:
In a large non-stick skillet, heat canola oil and avocado oil over medium-high heat until shimmering.

4. Cook the Potatoes:
Add the seasoned potatoes to the skillet in an even layer. Saute for 15 minutes, stirring occasionally, until the potatoes are golden brown and cooked through.

5. Saute the Vegetables:
Add the sliced onions and peppers to the skillet with the potatoes. Saute for an additional 8-10 minutes until the vegetables are tender.

6. Add Spices and Cheese:
While the vegetables are cooking, sprinkle cayenne pepper, red chili flakes, and Cuban Style Seasoning Blend over the mixture. Toss to combine. Once the vegetables are cooked, reduce the heat to low and sprinkle shredded cheese evenly over the top. Cover the skillet with a lid and allow the cheese to melt, about 2 minutes.

7. Finish with Flavor:
Remove the lid and sprinkle fresh thyme leaves over the melted cheese. Drizzle hot sauce as desired for an extra kick.

8. Serve:
