Spicy Cajun Corn & Edamame Sauté with Roasted Red Peppers

- 1 cup frozen corn, thawed
- 1 cup frozen edamame, shelled and thawed
- 1 cup roasted red bell peppers, chopped
- 2 teaspoons Cajun seasoning
- 2 tablespoons olive oil
- 4 green onions, sliced

Instructions



1. Prepare Ingredients.
Begin by thawing the frozen corn and edamame. Once thawed, pat them dry with a paper towel to remove excess moisture. Chop the roasted red bell peppers into small bite-sized pieces. Dice the green onions finely, separating the white and green parts.

2. Heat the Oil.
In a large skillet, heat 2 tablespoons of olive oil over medium heat for about 30 seconds.

3. Sauté Vegetables.
Add the white parts of the sliced green onions to the skillet and sauté for about 1 minute, or until they become fragrant and slightly translucent.

4. Cook Corn and Edamame.
