Spicy Cajun Corn & Edamame Sauté with Roasted Red Peppers
Ingredients
- 1 cup frozen corn, thawed
- 1 cup frozen edamame, shelled and thawed
- 1 cup roasted red bell peppers, chopped
- 2 teaspoons Cajun seasoning
- 2 tablespoons olive oil
- 4 green onions, sliced
- Salt, to taste
- Black pepper, to taste
Instructions
1. Prepare Ingredients.
Begin by thawing the frozen corn and edamame. Once thawed, pat them dry with a paper towel to remove excess moisture. Chop the roasted red bell peppers into small bite-sized pieces. Dice the green onions finely, separating the white and green parts.
2. Heat the Oil.
In a large skillet, heat 2 tablespoons of olive oil over medium heat for about 30 seconds.
3. Sauté Vegetables.
Add the white parts of the sliced green onions to the skillet and sauté for about 1 minute, or until they become fragrant and slightly translucent.
4. Cook Corn and Edamame.
Increase the heat to medium-high and add the corn and edamame. Sauté for 3-5 minutes, stirring frequently, until they are lightly browned and warmed through.
5. Add Peppers and Seasoning.
Mix in the chopped roasted red bell peppers and sprinkle with 2 teaspoons of Cajun seasoning. Season with salt and pepper to taste. Continue cooking for an additional 2-3 minutes, ensuring that everything is well combined and heated.
6. Finishing Touches.
Stir in the green parts of the green onions. Sauté for another 30 seconds to 1 minute, just until the onions are vibrant and mixed through the dish.
