Spicy Chicken and Veggie Tortilla Wraps



Ingredients



- 2 large boneless, skinless chicken breasts
- 1 tablespoon salmon seasoning (for a smoky flair)
- 2 tablespoons vegetable oil
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 large onion, thinly sliced
- 1 cup mixed vegetables (e.g., corn, zucchini, and carrots)
- 4 large flour tortillas
- 1 cup guacamole
- 1 cup cooked black beans
- 1 cup cooked white rice
- 1 cup of your favorite sauce (salsa or enchilada sauce suggested)
- Salt and pepper to taste

Instructions



1. Prepare the Chicken
1.1. Begin by patting the chicken breasts dry with paper towels.
1.2. Generously season both sides with salmon seasoning, salt, and pepper.
1.3. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat until shimmering.
1.4. Place the chicken breasts in the pan and cook for 6-7 minutes on each side until golden brown and cooked through. Internal temperature should reach 165°F.
1.5. Once cooked, remove the chicken from the skillet and let it rest for 5 minutes before slicing thinly across the grain.

2. Cook the Vegetables
2.1. In the same skillet, add the remaining tablespoon of oil.
2.2. Add the sliced bell peppers and onion, sautéing for about 5 minutes or until the vegetables have softened.
2.3. Add the mixed vegetables to the skillet, cooking for an additional 3-4 minutes.
2.4. Stir in the cooked black beans and break down large lumps, ensuring everything is heated through.

3. Assemble the Wraps
3.1. Warm the tortillas in a dry pan over low heat or in the microwave for about 30 seconds to make them pliable.
3.2. Spread about 2 tablespoons of guacamole onto each tortilla.
3.3. Layer with rice, followed by the sliced chicken and the vegetable mixture.
3.4. Drizzle your chosen sauce generously over the contents.
3.5. Roll up the tortillas tightly, folding in the sides as you go, to form a wrap.

4. Final Touch
4.1. For an added touch of texture, you can return each wrap to the pan, seam side down, and pan-fry for about 1 minute on each side, creating a lightly crispy exterior.
