Spicy Chicken with Avocado-Lime Salsa
Ingredients
For the Chicken:
- 4 boneless, skinless chicken breasts
- 1 teaspoon cayenne pepper
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons olive oil
For the Avocado-Lime Salsa:
- 2 ripe avocados, diced
- 1 red onion, finely chopped
- 2 tablespoons freshly squeezed lime juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
Step 1: Season the Chicken
- In a small bowl, combine the cayenne pepper, salt, and black pepper.
- Sprinkle the seasoning evenly over both sides of the chicken breasts.
Step 2: Cook the Chicken
- Heat the olive oil over medium heat in a large skillet on the stove.
- Once the oil is hot, add the chicken breasts to the skillet.
- Cook the chicken for about 6-8 minutes on each side, or until fully cooked and golden brown. The internal temperature should reach 165°F.
- Remove the chicken from the skillet and let it rest for a few minutes before serving.
Step 3: Prepare the Avocado-Lime Salsa
- In a mixing bowl, combine the diced avocados, chopped red onion, lime juice, salt, and black pepper.
- Gently mix all the ingredients until well combined. Adjust seasoning with more salt or lime juice if necessary.
Step 4: Serve
- Slice the cooked chicken and place it on a serving platter.
- Top with the avocado-lime salsa before serving.
