Spicy Chile Crisp Tortilla Roll-Ups
Ingredients
- 4 large tortillas
- 4 tablespoons garlic bread butter, softened
- 4 large eggs
- 1/4 cup cilantro, chopped
- 4 tablespoons chile crisp
- 1 cup cheese, shredded (cheddar or your choice)
- 1 large tomato, diced
- 4 tablespoons mayonnaise
- 1 teaspoon salt
Instructions
1. Prepare Ingredients:
- Dice the tomato and set aside.
- Chop the cilantro finely.
2. Cook the Eggs:
- Crack the eggs into a bowl and add salt. Beat until well mixed.
- Heat a non-stick skillet over medium heat.
- Add 1 tablespoon of garlic bread butter into the hot pan.
- Pour the beaten eggs into the pan and scramble until fully cooked, about 3-5 minutes. Remove from heat and set aside.
3. Assemble the Tortillas:
- Lay out the tortillas on a clean surface.
- Spread 1 tablespoon of mayonnaise over each tortilla.
- Sprinkle an even layer of cheese on each tortilla.
- Divide the scrambled eggs evenly among the tortillas.
- Add diced tomatoes and chopped cilantro on top of the eggs.
4. Add Spice:
- Drizzle 1 tablespoon of chile crisp over the contents of each tortilla.
5. Roll and Toast:
- Carefully roll each tortilla into a tight wrap.
- Heat a clean skillet over medium-high heat.
- Add the remaining garlic bread butter to the skillet.
- Place the rolled tortillas seam-side down in the skillet.
- Toast each side for about 2-3 minutes, or until golden brown and crispy.
6. Serve and Enjoy:
- Cut each roll-up in half for easier serving.
- Plate and enjoy as a delightful, spicy snack.
