Spicy Creole Sausage and Marinara Pasta



Ingredients



- 2 tablespoons vegetable oil
- 12 ounces Andouille sausage, sliced
- 1 large green bell pepper, diced
- 1 large Vidalia or yellow onion, diced
- 2 stalks celery, diced
- 3 cups marinara sauce
- 1 tablespoon Tony Chachere’s No-Salt Creole seasoning
- 1/2 cup water
- 1/2 teaspoon salt
- 12 ounces spaghetti noodles
- 1/2 cup freshly grated Parmesan cheese
- 1/4 cup chopped fresh parsley

Instructions



1. Prepare the Ingredients:
Dice the green bell pepper, Vidalia onion, and celery. Slice the Andouille sausage into 1/4-inch pieces.

2. Cook the Pasta:
In a large pot, bring 4 quarts of water to a boil. Add the spaghetti noodles and 1/2 teaspoon salt. Cook for approximately 8-10 minutes until al dente. Drain and set aside.

3. Saute the Sausage and Vegetables:
In a large pan, heat 2 tablespoons of vegetable oil over medium-high heat. Add the sliced Andouille sausage and sauté for 5 minutes until browned. Remove from the pan and set aside.

4. Saute the Vegetables:
Using the same pan, add the diced green bell pepper, Vidalia onion, and celery. Sauté for 5-7 minutes until the vegetables are softened.

5. Combine and Season:
Return the browned Andouille sausage to the pan. Add 3 cups of marinara sauce, 1 tablespoon of Tony Chachere’s No-Salt Creole seasoning, and 1/2 cup of water. Stir to combine.

6. Simmer the Sauce:
Reduce the heat to medium-low and let the sauce simmer for 10 minutes, allowing the flavors to meld together.

7. Combine with Pasta:
Add the cooked spaghetti to the pan, tossing to coat the noodles evenly with the spicy Creole sauce. Cook for an additional 2-3 minutes.

8. Serve and Garnish:
Plate the pasta and sprinkle each serving with freshly grated Parmesan cheese and chopped parsley.
