Spicy Green Chicken Chili with Fresh Avocado Garnish
Ingredients
- 1 ½ cups water
- 2 cooked roasted chicken breasts, shredded
- 1 can (15 oz) Great Northern beans, drained and rinsed
- 1 can (15 oz) Pinto beans, drained and rinsed
- 1 cup corn kernels (fresh or frozen)
- 1 can (10.5 oz) condensed cream of chicken soup
- 1 can (10 oz) green enchilada sauce
- 1 can (4 oz) chopped green chiles
- 1 packet (1 oz) white chicken chili seasoning mix
- 1 ripe avocado, diced
- ¼ cup cilantro leaves, chopped
- 1-2 jalapeño chiles, thinly sliced
- 4 radishes, thinly sliced
Instructions
1. Prepare Ingredients
Begin by shredding the roasted chicken breasts and setting them aside. Rinse and drain the Great Northern and Pinto beans, and gather all other ingredients.
2. Combine Base Ingredients
In a large pot, combine 1½ cups of water with the condensed cream of chicken soup. Stir well to blend until you have a creamy base.
3. Add Chicken and Beans
Add the shredded chicken, Great Northern beans, and Pinto beans to the pot. Stir until all ingredients are evenly mixed with the base.
4. Incorporate Vegetables and Flavorings
Add corn kernels, green enchilada sauce, chopped green chiles, and the white chicken chili seasoning mix. Stir to combine thoroughly.
5. Simmer the Chili
Place the pot over medium heat and bring to a gentle simmer. Allow the chili to cook, stirring occasionally, for approximately 20 minutes PT20M.
6. Prepare Garnishes
While the chili is simmering, prepare the garnishes. Dice the avocado, chop the cilantro, and thinly slice the jalapeño chiles and radishes.
7. Adjust Seasoning and Serve
Once the chili has cooked for 20 minutes and flavors have melded, taste and adjust seasoning if necessary. Ladle the chili into bowls and top with diced avocado, chopped cilantro, jalapeño slices, and radish slices.
