Spicy Grilled Barbecue Chicken
Ingredients
- 8 bone-in chicken thighs
- 1 cup bottled barbecue sauce
- 1/4 cup apple cider vinegar
- 1 tablespoon Tabasco sauce
- 1 tablespoon Frank's Red Hot sauce
- Salt and pepper to taste
Instructions
1. Marinate the Chicken: In a large mixing bowl, combine the barbecue sauce, apple cider vinegar, Tabasco sauce, and Frank's Red Hot sauce. Stir thoroughly until all ingredients are well incorporated. Season the chicken thighs with salt and pepper, then place them in the bowl, ensuring they are fully coated with the marinade. Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld. For best results, marinate for 4 hours or overnight.
2. Prepare the Charcoal Grill: Arrange charcoal briquettes in a chimney starter and light them. Once the charcoal is ashen and glowing, pour them into the charcoal grate of your grill. Create a two-zone heat setup by spreading the coals to one side for direct heat grilling and the other side for indirect heat.
3. Grill the Chicken: Remove the chicken thighs from the marinade, allowing excess marinade to drip off, and reserve it for basting. Place the chicken thighs skin-side down on the cooler side of the grill. Cover the grill and cook for 25 minutes, turning occasionally.
4. Baste and Sear: After 25 minutes, move the chicken thighs to the hotter side of the grill. Baste them with the reserved marinade. Cook for an additional 10 minutes, turning and basting frequently, until the skin is crispy and the internal temperature of the chicken reaches 165°F.
5. Rest and Serve: Remove the chicken from the grill and let rest for 5 minutes to allow the juices to redistribute. Serve hot with your favorite sides.
