Spicy Herb-Crusted Chicken with Savory Rice Pilaf
Ingredients
For the Chicken:
- 4 boneless, skinless chicken breasts
- Extra Virgin Olive Oil Nonstick Cooking Spray
- 1 cup plain bread crumbs
- 2 tablespoons granulated sugar
- 1 tablespoon brown sugar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon ground mustard
- 1/2 teaspoon dried thyme
- 1 teaspoon Italian seasoning
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1/2 teaspoon paprika
- 1/4 teaspoon crushed red pepper flakes
- 1/4 teaspoon smoked paprika
- 1/8 teaspoon cayenne pepper
- 1/8 teaspoon white pepper
For the Sauce:
- 1/2 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1 tablespoon red wine vinegar
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Better Than Boullion
- 1-2 teaspoons hot sauce (adjust to taste)
For the Rice Pilaf:
- 1 cup long grain white rice
- 2 cups water
- 1 teaspoon salt
- 1 tablespoon extra virgin olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
Instructions
1. Prepare the Herb-Crusted Chicken:
- Preheat a large skillet over medium heat.
- Evenly coat the skillet with Extra Virgin Olive Oil Nonstick Cooking Spray.
- In a shallow dish, combine bread crumbs, granulated sugar, brown sugar, salt, black pepper, garlic powder, onion powder, chili powder, ground cumin, ground mustard, dried thyme, Italian seasoning, dried basil, dried oregano, paprika, crushed red pepper flakes, smoked paprika, cayenne pepper, and white pepper. Mix well.
- Rub each chicken breast with a small amount of olive oil, then press into the bread crumb mixture to coat evenly on all sides.
- Place the chicken breasts in the preheated skillet and cook until golden brown and cooked through, about 7 minutes per side, or until the internal temperature reaches 165°F (75°C).
2. Make the Sauce:
- In a small bowl, whisk together mayonnaise, Dijon mustard, red wine vinegar, Worcestershire sauce, Better Than Boullion, and hot sauce. Adjust seasoning to taste. Serve alongside the chicken for dipping.
3. Cook the Rice Pilaf:
- In a medium saucepan, bring 2 cups of water to a boil.
- Add rice, salt, olive oil, garlic powder, and onion powder. Stir to combine.
- Reduce heat to low, cover, and simmer for 18-20 minutes or until the rice is tender and the water is absorbed.
- Fluff the rice with a fork before serving.
