Spicy Herb-Infused Sautéed Vegetable Medley
Ingredients
- 1 tablespoon coriander seeds
- 1 teaspoon black peppercorns
- 1 jalapeño, sliced
- 1 Anaheim pepper, sliced
- 4 cloves garlic, minced
- 1 tablespoon ginger, minced
- 4 green onions, chopped
- 1 tablespoon lemongrass paste
- 2 tablespoons brown sugar
- 1 lime, juiced
- 2 tablespoons fish sauce
- 1/4 cup fresh mint leaves
- 1/4 cup fresh basil leaves
- 1/4 cup chopped cilantro stems
- 2 tablespoons sesame oil
- 1 teaspoon sea salt
Instructions
1. Prep the Aromatics:
Toast 1 tablespoon of coriander seeds and 1 teaspoon of black peppercorns in a dry skillet over medium heat for about 2-3 minutes until fragrant. Grind the toasted spices with a mortar and pestle. Set aside.
2. Prepare the Peppers:
Slice 1 jalapeño and 1 Anaheim pepper. Set aside.
3. Sauté the Aromatics:
In a large skillet, heat 2 tablespoons of sesame oil over medium-high heat. Add the minced 4 garlic cloves and 1 tablespoon of ginger. Sauté for 1-2 minutes until fragrant.
4. Combine Vegetables and Spices:
Add the sliced jalapeño and Anaheim peppers to the skillet. Stir in the ground coriander and black pepper mixture, and sauté for 3-4 minutes until the peppers start to soften.
5. Deglaze and Sweeten:
Reduce the heat to medium and add 1 tablespoon of lemongrass paste and 2 tablespoons of brown sugar. Stir continuously until the sugar dissolves.
6. Flavor Burst:
Pour in 2 tablespoons of fish sauce and the juice from 1 lime. Stir to combine all the ingredients. Simmer for 2-3 minutes.
7. Finish with Fresh Herbs:
Add 4 chopped green onions, 1/4 cup mint leaves, 1/4 cup basil leaves, and 1/4 cup chopped cilantro stems. Cook for an additional 2 minutes until the herbs are just wilted.
8. Adjust and Serve:
Taste and season with 1 teaspoon of sea salt. Serve immediately for optimal flavor and texture.
