Spicy Honey Ramen Stir-Fry with Sesame-Infused Vegetables
Ingredients
- 4 large eggs
- 2 packs ramen noodles (discard flavor packets)
- 1 tablespoon sriracha
- 2 tablespoons honey
- 2 tablespoons sesame oil
- 1 tablespoon rice vinegar
- 2 tablespoons soy sauce
- 2 cups broccoli florets
- 1 cup sliced carrots
- 1 cup sliced mushrooms
- 1 cup bean sprouts
- 1 teaspoon red pepper flakes
- 1 jalapeño, thinly sliced
Instructions
1. Prepare Ramen Noodles:
- In a large pot, bring water to a boil. Add ramen noodles and cook until just tender, about 3 minutes. Drain and set aside.
2. Prepare Sauce:
- In a small bowl, mix together sriracha, honey, sesame oil, rice vinegar, and soy sauce. Set aside for later use.
3. Cook Vegetables:
- In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat. Add broccoli, carrots, and mushrooms. Stir-fry for 5–7 minutes until vegetables are tender yet crisp.
4. Add Noodles and Sauce:
- Reduce the heat to medium. Add the drained ramen noodles to the skillet. Pour the sriracha-honey sauce over the noodles and vegetables. Toss everything to coat evenly.
5. Prepare Eggs:
- In a separate non-stick pan, fry the eggs sunny side up (or to your liking) on medium-low heat until whites are set, about 2–3 minutes. Season with salt and pepper.
6. Combine and Garnish:
- Add bean sprouts and red pepper flakes to the skillet. Stir gently to combine. Remove from heat. Top each serving with a fried egg and slices of jalapeño.
