Spicy Jalapeño Hummus with Caramelized Onion and Pita



Ingredients



- 1 can (15 oz) chickpeas, drained and rinsed
- 1/4 cup tahini
- 1 lemon, juiced
- 2 cloves garlic, minced
- 1 jalapeño, seeded and chopped
- 1/4 cup caramelized onions
- 1 tablespoon preserved lemon, finely chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
- 4 pita breads, cut into triangles
- 3 carrots, cut into sticks

Instructions




  1. Prepare the Jalapeño Hummus:

    1. In a food processor, combine chickpeas, tahini, lemon juice, minced garlic, chopped jalapeño, caramelized onions, preserved lemon, and olive oil.

    2. Blend until smooth, adding water one tablespoon at a time if needed for a creamy consistency.

    3. Season with salt and pepper to taste. Transfer to a serving bowl and set aside.




  2. Toast the Pita Bread:

    1. Preheat a large skillet over medium heat.

    2. Add the pita triangles and toast them, turning them occasionally, for about 2 minutes on each side until they are golden and slightly crisp.

    3. Remove from heat and let them cool on a wire rack.




  3. Assemble the Snack:

    1. Arrange the pita triangles and carrot sticks around the prepared hummus bowl for dipping.

    2. Garnish the hummus with a drizzle of olive oil and a few slices of jalapeño for decoration.
