Spicy Korean-Style Chicken & Pork Ramen Delight
Ingredients
- 1 package Shin Ramyun instant noodles
- 4 cups chicken bone broth
- 1 medium onion, thinly sliced
- 3 cloves garlic, minced
- 1 cup veggie scraps (carrot peels, celery leaves, etc.)
- 1 large egg
- 2 spring onions, chopped
- 1/4 cup cilantro, roughly chopped
- 1 cup shredded roast chicken
- 1 cup pulled pork
Instructions
1. Prepare the Broth:
In a large pot over medium heat, add the chicken bone broth along with the onions, garlic, and veggie scraps. Bring to a gentle simmer, allowing the flavors to infuse for about 10 minutes.
2. Cook the Noodles:
Meanwhile, in a separate pot, bring 2 cups of water to a boil. Add the Shin Ramyun noodles and cook according to package instructions (approximately PT4M, 4 minutes). Drain and set aside.
3. Strain the Broth:
After 10 minutes of simmering, strain the broth to remove onion slices, garlic, and veggie scraps. Return the clear broth to the pot.
4. Enhance the Broth:
Add the seasoning packet from the Shin Ramyun noodles to the broth. Stir well until fully dissolved and return to a simmer.
5. Add Proteins:
Add the shredded roast chicken and pulled pork to the simmering broth. Allow to heat through for an additional PT5M (5 minutes) or until both meats are warm.
6. Poach the Egg:
Lower the heat to medium-low and gently crack the egg into the broth. Poach for PT3M (3 minutes) or until the egg white is set but the yolk remains soft.
7. Assemble the Dish:
Divide the cooked noodles between four serving bowls. Ladle the hot broth with the chicken, pork, and poached egg evenly over the noodles.
8. Garnish:
Top each bowl with chopped spring onions and cilantro. Serve immediately and enjoy the spicy, savory goodness.
