Spicy Lime Chicken and Corn Chowder



Ingredients



- 2 tablespoons olive oil
- 1 large onion, finely chopped
- 2 jalapeños, seeded and minced
- 3 cloves garlic, minced
- 2 cups frozen white corn
- 4 cups chicken broth
- 2 cups water
- 2 boneless, skinless chicken breasts
- 3 Roma tomatoes, diced
- 1 teaspoon dried tarragon
- 1 teaspoon ground coriander
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons lime juice

Instructions



1. Prepare the Ingredients:
Begin by chopping the onion and jalapeños, and mince the garlic. Dice the Roma tomatoes. Keep all ingredients separate for easy access during cooking.

2. Cook the Aromatics:
In a large pot, heat the olive oil over medium heat. Add the chopped onion and jalapeños, and sauté until the onion is translucent, about PT5M (5 minutes). Stir in the minced garlic and sauté for an additional PT1M (1 minute).

3. Add Corn and Liquids:
Pour the frozen corn into the pot and cook for PT3M (3 minutes) until lightly toasted. Add the chicken broth and water, bringing the mixture to a gentle boil.

4. Poach the Chicken:
Lower the heat to a simmer and gently add the boneless, skinless chicken breasts to the pot. Poach the chicken for PT15M (15 minutes), or until cooked through and tender.

5. Flavor the Chowder:
Remove the chicken and let it rest on a cutting board for a few minutes. Meanwhile, add the diced Roma tomatoes, dried tarragon, ground coriander, salt, and pepper to the pot. Stir well and let simmer.

6. Shred and Serve:
Shred the poached chicken using two forks, then return it to the pot. Add chopped cilantro and lime juice. Stir thoroughly and let the chowder simmer for another PT5M (5 minutes) to combine the flavors.

7. Adjust Seasoning & Serve:
Taste the chowder and adjust seasoning with more salt, pepper, or lime juice if needed. Serve hot, garnished with additional cilantro if desired.
