Spicy Maple-Glazed Chipotle Potatoes
Ingredients
- 2 lbs russet potatoes, peeled and cubed
- 2 tablespoons chipotles in adobo sauce, minced
- 3 tablespoons maple syrup
- 2 tablespoons tamari sauce
- 2 tablespoons fresh lime juice
- 2 tablespoons olive oil
- Salt, to taste
- Freshly ground black pepper, to taste
Instructions
1. Prepare the Potatoes:
- Place the cubed potatoes in a large pot. Cover with water and add a generous pinch of salt.
- Bring to a boil over high heat, then reduce heat to medium and simmer for 10 minutes, or until the potatoes are just fork-tender.
- Drain the potatoes and set aside.
2. Make the Glaze:
- In a small bowl, combine the minced chipotles in adobo, maple syrup, tamari, and lime juice. Mix well to create a spicy and tangy glaze.
3. Cook the Potatoes:
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
- Add the boiled potatoes to the skillet in a single layer. Cook for about 5 minutes, gently stirring occasionally, until they start to brown.
4. Glaze and Season:
- Pour the prepared chipotle-maple glaze over the potatoes.
- Stir well to coat the potatoes evenly. Cook for an additional 5 minutes, allowing the glaze to thicken and coat the potatoes beautifully.
5. Serve:
- Season with salt and freshly ground black pepper to taste.
- Transfer to a serving dish, garnish with a squeeze of lime juice, and serve warm as a delicious side or main dish for dinner.
