Spicy Peanut Noodle Bowl



Ingredients



- 8 oz noodles (any type of your choice)
- 1/3 cup peanut butter (smooth or chunky)
- 1/4 cup sweet chili sauce
- 2 tablespoons soy sauce
- 2 cups boiling water
- 1/2 teaspoon salt
- 4 green onions, chopped
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons sesame seeds

Instructions



1. Boil Noodles:
- In a medium-sized pot, bring 2 cups of water to a rolling boil over medium-high heat.
- Add 8 oz of noodles, and 1/2 teaspoon salt, and cook according to package instructions or until al dente, generally about 8-10 minutes.
- Once cooked, drain and set aside.

2. Prepare Peanut Sauce:
- In a medium bowl, combine 1/3 cup peanut butter, 1/4 cup sweet chili sauce, and 2 tablespoons soy sauce.
- Stir the mixture until smooth and well-blended.

3. Assemble the Dish:
- Add the warm noodles to the peanut sauce mixture and toss until the noodles are thoroughly coated.
- Mix in half of the chopped green onions and cilantro for even flavor distribution.

4. Serve:
- Transfer the noodles to serving bowls.
- Garnish each bowl with the remaining green onions, fresh cilantro, and sprinkle with 2 tablespoons of sesame seeds.
