Spicy Pineapple Chicken Stir-Fry



Ingredients


- 2 chicken breasts, sliced into thin strips
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 medium red onion, sliced
- 1 can (20 oz) pineapple chunks, drained (reserve 1/2 cup juice)
- 1/4 cup soy sauce
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons chili crisp
- 2 tablespoons cornstarch
- 3 tablespoons olive oil
- 1 cup uncooked rice

Instructions


1. Prepare the Rice:
- Rinse 1 cup of rice under cold water until the water runs clear.
- In a medium saucepan, bring 2 cups of water to a boil. Add the rice, reduce heat to low, cover, and simmer for 15 minutes or until the rice is cooked and water is absorbed. Fluff with a fork and set aside.

2. Marinate the Chicken:
- In a bowl, mix 1/4 cup soy sauce, 2 tablespoons of the reserved pineapple juice, 2 tablespoons cornstarch, and 1 tablespoon chili crisp.
- Add the chicken strips to the marinade, ensuring they are well coated. Let them marinate for at least 10 minutes.

3. Prep the Vegetables:
- While the chicken is marinating, slice the red and green bell peppers and the red onion. Set aside.

4. Cook the Chicken:
- Heat 1.5 tablespoons of olive oil in a large wok or skillet over medium-high heat.
- Add the marinated chicken strips and stir-fry for about 5-7 minutes until they are cooked through and golden brown. Remove from the pan and set aside.

5. Stir-Fry the Vegetables:
- In the same pan, add the remaining 1.5 tablespoons of olive oil.
- Add the minced garlic and grated ginger. Sauté for about 30 seconds until fragrant.
- Add the sliced bell peppers and red onion. Stir-fry for about 4-5 minutes until they are slightly tender but still crisp.

6. Combine & Finish:
- Return the cooked chicken to the pan.
- Add the drained pineapple chunks, the remaining 2 tablespoons of the reserved pineapple juice, and 1 tablespoon of chili crisp.
- Stir everything together and cook for an additional 2 minutes to heat through and blend the flavors.

7. Serve:
- Serve the spicy pineapple chicken stir-fry over a bed of the prepared rice.
