Spicy Sausage and Cabbage Pasta with Lemon Basil Sauce



Ingredients



- 12 ounces pasta (linguine or spaghetti recommended)
- 1 pound sausage, casings removed
- 3 tablespoons butter
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 2 cups cabbage, thinly sliced
- 1/2 teaspoon crushed red pepper
- 1 teaspoon kosher salt
- 1/2 cup Parmesan cheese, freshly grated
- 2 tablespoons fresh lemon juice
- 1/4 cup fresh basil, chopped

Instructions



1. Prepare the Ingredients: Gather all ingredients and prepare for cooking by chopping onion, mincing garlic, slicing cabbage, grating Parmesan cheese, and chopping fresh basil.

2. Cook the Pasta: In a large pot, bring water to a boil. Add a pinch of salt and the pasta. Cook according to package instructions until al dente, usually about PT10M (10 minutes). Reserve 1 cup of pasta water, then drain the pasta.

3. Brown the Sausage: In a large skillet over medium heat, add the sausage and cook, breaking it into smaller pieces with a spoon, until browned and cooked through, about PT6M (6 minutes). Remove the sausage and set aside on a plate.

4. Sauté Aromatics: In the same skillet, add the butter. Once melted, add the onion and garlic. Sauté until the onion is translucent and the garlic is fragrant, approximately PT3M (3 minutes).

5. Cook the Cabbage: Add the sliced cabbage to the skillet. Cook until it starts to soften, about PT5M (5 minutes). Stir occasionally to ensure even cooking.

6. Combine Ingredients: Return the sausage to the skillet with the cabbage mixture. Stir in the crushed red pepper and kosher salt until well combined.

7. Finish with Pasta: Add the drained pasta to the skillet. Pour in the reserved pasta water, a little at a time, and stir to create a creamy sauce. Add the Parmesan cheese and fresh lemon juice, mixing thoroughly to coat the pasta evenly.

8. Add Freshness: Stir in the chopped fresh basil until just wilted. Remove from heat.

9. Serve: Garnish with extra Parmesan cheese and fresh basil if desired. Serve hot.
