Spicy Shrimp and Crawfish Jambalaya
Ingredients
- 1 pound shrimp, peeled and deveined
- 1 cup white rice
- 1 tablespoon chili powder
- 2 medium bell peppers, diced
- 1/2 pound crawfish tails
- 1 large onion, chopped
- 1 can (10 oz) Rotel tomatoes and green chilies
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 2 cups chicken broth
- Salt and pepper to taste
- Optional: chopped parsley for garnish
Instructions
1. Prepare the Ingredients
- Rinse the shrimp under cold water, ensuring all are peeled and deveined.
- Dice the bell peppers and chop the onion. Mince the garlic.
2. Cook the Vegetables
- In a large skillet, heat 2 tablespoons of olive oil over medium heat.
- Add the chopped onions, diced bell peppers, and minced garlic. Sauté for about 5 minutes or until the onions become translucent.
3. Add the Rice and Seasoning
- Stir in the white rice and chili powder, allowing the rice to toast slightly in the skillet for about 2 minutes. This step enhances the flavor by coating the rice with the spices and oil.
4. Simmer with Liquids
- Pour in the can of Rotel tomatoes and green chilies, followed by the chicken broth.
- Stir the mixture thoroughly, then bring it to a boil. Reduce the heat to low, cover the skillet, and let it simmer for 15 minutes or until the rice is cooked through.
5. Incorporate the Seafood
- Add the shrimp and crawfish tails to the skillet, stirring gently to combine with the rice and vegetables.
- Cover again and cook for an additional 5 minutes, or until the shrimp are pink and cooked through.
6. Season and Serve
- Season with salt and pepper to taste.
- Garnish with chopped parsley if desired and serve warm.
