Spicy Shrimp Fajita Wraps
Ingredients
- 1 lb shrimp, peeled and deveined
- 1 medium onion, thinly sliced
- 2 bell peppers (any color), thinly sliced
- 8 flour tortillas (8-inch)
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1/2 teaspoon chipotle powder
- 1 teaspoon cumin powder
- 1 teaspoon oregano
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt, or to taste
- 1 avocado, sliced
- 1 cup shredded lettuce
- 1/2 cup black olives, sliced
- 1/4 cup pickled jalapeños, sliced
- 1/2 cup diced green chiles
- 1 cup Mexican cheese blend, shredded
- 1/2 cup crumbled feta
- 1/2 cup shredded Monterey Jack cheese
- 1/2 cup sour cream
- 1 cup salsa
- 1 cup guacamole
- 1/4 cup chopped cilantro
- 1 lime, cut into wedges
Instructions
1. Marinate the Shrimp: In a large bowl, combine shrimp, paprika, chipotle powder, cumin, oregano, onion powder, and salt. Mix well to coat the shrimp evenly. Set aside for 10 minutes.
2. Saute Vegetables: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add sliced onions and bell peppers. Sauté for about 5 minutes until they become soft and slightly charred. Remove from skillet and set aside.
3. Cook the Shrimp: Add the remaining tablespoon of olive oil to the same skillet over medium-high heat. Add the marinated shrimp to the skillet. Cook for 4–5 minutes, stirring occasionally, until shrimps turn pink and are cooked through. Return sautéed onions and bell peppers to the skillet. Stir together and cook for an additional 1–2 minutes. Remove from heat.
4. Prepare Tortillas: Warm the flour tortillas in a separate dry skillet over medium heat, about 30 seconds per side, until soft and pliable.
5. Assemble the Fajita Wraps: Place a warm tortilla flat on a serving plate. Add a portion of shrimp and vegetable mix in the center. Top with avocado slices, a handful of shredded lettuce, black olives, jalapeños, green chiles, and a sprinkle of Mexican cheese blend, feta, and Monterey Jack cheese.
6. Garnish and Serve: Add a dollop of sour cream, salsa, and guacamole on top. Sprinkle with chopped cilantro. Serve with lime wedges on the side.
